last night, i read about an awesome thing that chris + lynn are doing called cans for comments. basically, you post a comment on their blog in the next week, and for each contributor, they will donate a canned good to their local food bank. what a generous and fun idea! i immediately told lynn that i’m copying her… and looking at their blog today, so are lots of other photographers! so, start commenting… it just takes a minute or two, and if you visit everyone’s blog, you can really make a difference! so, have a look around the blog — looking forward to some feedback!
note: the cans for all your comments on my blog will go to the vancouver food bank.

i wanted to take a photo of a bunch of canned goods to add to this post, but going through my cupboards… well, i don’t really have many cans… i have a few cans of tomatoes, two cans of black beans, two cans of beets (i’ve never eaten canned beets in my life), one can of pumpkin puree (so i can attempt to make my own pumpkin spice lattes), and even more random… heart of palm. never before have i eaten heart of palm. but i own it. and here’s the (additional) proof of what a strange person i am:

ps. anyone know what i can do with heart of palm? how on earth do you eat it??

Here’s a little bday present
a recipe:
Salad of Black Beans, Hearts of Palm and Corn
yield: Serves 4
Ingredients
* 1 16-ounce can black beans, rinsed, drained
* 1 10-ounce package frozen corn, thawed, drained
* 1 7 1/2-ounce can hearts of palm, drained, cut into 1/4-inch-thick rounds
* 2 large tomatoes, seeded, diced
* 1/2 red onion, minced
* 1/2 cup chopped fresh cilantro
* 1/4 cup olive oil
* 3 tablespoons fresh lime juice
* 1 teaspoon ground coriander
Preparation
Mix all ingredients in medium bowl. Season salad to taste with salt and pepper. (Salad can be prepared 1 day ahead. Cover and refrigerate.)
I love this idea! I’m so glad that someone thought of it, and a little ashamed that I didnt. But i’m totally in, add me to the list.

The only thing I have ever done with hearts of palm is throw it in a stirfry. Good luck!
